The Cuisine

The cuisine of Atypical begins with memory.

It carries the soul of the Italian table: the Sunday lunches of childhood, the scent of tomato, the patience of handmade pasta, the generosity of the South, the precision of technique and the quiet confidence of ingredients treated with respect.

Our menu celebrates Italy through a personal and contemporary lens, with particular attention to Puglia, Sardinia and the Mediterranean.

Fresh pasta is at the centre of our identity.

Each dish is created to express clarity, balance and depth: never excessive, never anonymous, always connected to a place, an ingredient or a memory.

From Sardinian culurgiones to fresh truffle shaved at the table, from our potato gnocchi with Parmesan fondue, gorgonzola, spinach, pistachio and burrata cream, to vitello tonnato, carpaccio, sea bass, Marangiana and handmade Italian desserts, every plate is conceived as a dialogue between tradition and refinement.

Our approach is simple only in appearance.

Behind each dish there is selection, preparation, discipline and sensitivity. The goal is not to impress through complexity, but to reveal the most authentic expression of each ingredient.

Because Italian cuisine, at its highest level, is not about adding more.

It is about knowing what to leave untouched.

Our wine selection is an expression of territory, identity and careful research.

We choose labels that speak of Puglia, Southern Italy and producers with a voice of their own: wines with personality, freshness, depth and a clear connection to the land.

The glass is never an accessory.

It is part of the rhythm of the meal. A companion to the dish, a continuation of the story, an invitation to slow down.

Our cocktails follow the same philosophy.

Italian ingredients, local character, balance, elegance and personality. Each drink is created not only to refresh, but to introduce a mood, a moment, a sense of place.

Atypical is the personal project of Chef Patron Massimo Sollai.

After more than twenty years of experience across ten different countries, throughout Europe, the United Kingdom, the Middle East and the Mediterranean, Chef Massimo returned to Italy to create his first restaurant in the country that, more than any other, represents his identity.

Atypical was born from this journey.

From the Sardinia of his childhood.
From the Puglia that welcomed him.
From international experience.


From the desire to create a restaurant where cuisine and hospitality are not two separate elements, but part of the same emotion.

The presence of the Chef Patron in the dining room is an essential part of the experience: a greeting, a conversation, a recommendation, a story shared at the table.

Because at Atypical, the relationship with the guest is just as important as the dish.
